For Crust:
Preheat oven to 400 degrees. In mixing bowl, mix nuts, butter, sugar,
egg yolk and flour at low speed until through mixed. With spatula,
spread mixture on bottom and sides of a 10inch pie pan. Bake at 400
degrees for 12 minutes. Cool completely.
For Filling:
In large mixing bowl, beat all ingredients except whipping cream at
medium speed until very thick and double in volume (10 - 15 minutes).
Set aside. In clean bowl with clean beaters, whip cream at low and then
high speed until stiff. Fold cream into strawberry mixture with rubber
spatula until blended. Pour into pie shell and swirl top with spoon. Put
uncovered into freezer and freeze until firm. (If necessary to store,
wrap securely with foil.) About 1 hour before serving, transfer pie into
refrigerator to soften. Serves 8. |
