Grate cheese and measure. Cheese that has dried somewhat is better
for grating. Sift flour and measure required amount.
Cream butter in a medium-size mixing bowl adding the cheese and blending
until well mixed. Add milk, beating it in a tablespoonful at a time.
Pour in flour and work the mixture with spoon or hands until it forms a
fairly smooth ball.
Press out the dough on a lightly floured surface, then roll with rolling
pin slightly thinner than for pie crust. Cut into small rounds or
sticks. Prick with fork. Place pieces on ungreased cookie sheet and bake
at 400� for 5 to 8 minutes. They should be slightly puffed and faintly
brown. Makes about 2 dozen. |
