1/2 C. butter or margarine, room temperature
1/2 C. sugar
3 eggs
1/2 tsp. vanilla extract
1 C. flour
1 lg. apple, pared, cored and cut into 1/4-inch thick wedges
1/4 C. sugar
1 tsp. cinnamon
1/4 C. coarsely chopped almonds
Directions:
Cream together butter and the 1/2 cup sugar. Add eggs and beat until
fluffy. Stir in vanilla and flour, mixing well. Spread evenly in greased
9-inch round cake pan. Place apple wedges into cake batter to form a
circular pattern. Mix together 1/4 cup sugar and cinnamon. Sprinkle over
cake. Sprinkle top with almonds.
Bake at 375� for 40 minutes or until a wooden toothpick inserted in
middle of cake comes out clean. This cake is good served with vanilla
ice cream or cinnamon flavored ice cream. (Deb Trump)
